The Healthy Holiday Comfort Food - Dark Chocolate

During the ever-mounting holiday festivities, mall shopping, office parties, family gatherings, neighborhood driveway fire pit gatherings; they all include that holiday food. Solution: During the ever-mounting holiday festivities take a healthy dark chocolate dessert or just carry some with you so you can still be eating with the rest of party goers.

My favorite healthy chocolate snack dessert is: put halves of pecans on a cookie sheet, spread with waxed paper, in a single layer; melt a bar of at least 70% dark chocolate in a double boiler, then drizzle the melted chocolate over the pecans. Depending on how many pecans you are using is how much chocolate you melt. Then I put the cookie sheet in the refrigerator for a little while to set the chocolate. They are a chocolate nut delight.

Did you know that eating 30 calories per day of dark chocolate may lower high blood pressure, it is a good idea to keep it limited to small portions as it is candy and it could blow your diet, just a little goes a long way.

Another thing to know is that the health benefits do not include milk chocolate or white chocolate, and you also need to watch the sugar content. Health food stores have bars with 75% (or greater) chocolate with only 5 grams of sugar and also are organic, so keep them in supply so when you are invited to a potluck and/or party, grab your chocolate bar and know you will be staying healthy and still get your chocolate fix.

Dark Chocolate increases dopamine release and provides flavonoids, which help keep arteries young. Chocolate also is a potent antioxidant, which gobbles up free radicals. But do not wash it down with milk as the two do not mix to keep the healthy benefits of the chocolate.

Here is some startling and great news for chocolate lovers everywhere. It is good for us! But only under certain circumstances.

In an article in the Washington Post dated 9 February 2005, Katherine Tallmadge a spokesperson for the American Dietic Association states that cacao or cocoa beans contain Flavanols a naturally occurring plant compound also found in tea, red wine and apples. Their properties have been studied as a heart disease inhibitor. Also in the same article Carl L Keen the Chair of the Department of Nutrition at University of California states that the Flavanols in cocoa help maintain a healthy vascular system. They reduce blood clotting an aspirin like effect reduce oxidative damage and improve blood flow.

Yet is the Flavanols in the chocolate which are bitter and often extensively taken out of processed chocolate. Each level of processing that takes place when the bean is being made into chocolate the level of flavinols decreases. Yet nowadays you will find some of the top producers of chocolate products such as Nestle and Mars Inc are trying to produce items that are good for you. It should not be too long before you will see bars and candies made from chocolate with high levels of flavanols included within them. However, if you are looking for a bar that does at present state the flavanol levels contained within it you only need to look at Mars Dove Dark Chocolate which contains 150mg of flavanols in every 1.3ozs of this chocolate ( a very high level indeed), but the downside to this product is that it contains 200 calories. But we do not live in the perfect world yet.

However, Ms Tallmadge recommends that whilst waiting for more high levels of flavanol products to be made you should take unsweented cocoa powder (not the Dutch processed kind (alkalized) as this has reduced flavanols). The next item you could try instead is either semi-sweet or bitter-sweet chocolate which has a high cocoa percentage. You may find some chocolates contain as much as 70% cocoa, but some may only have as much as 35%, and certainly with milk chocolate products you will find that the percentage will be even lower, and Ms Tallmadge suggests that these should not be eaten. In fact she states in the article that I recommend cocoa or an ounce per day of dark chocolate, which will may be about 110 to 150 calories, depending on the chocolate. Any more than that and youre probably going to take in too many calories for weight control.

Are you sure that what you just read is too true. A person of some note in the nutritional field is RECOMMENDING that we eat chocolate? Okay she may state that we should not eat too much of it, but its still chocolate.

White Chocolate - The Not-So-Chocolate Chocolate

Although its called chocolate, white chocolate isnt really chocolate at all. A hybrid that does derive its roots from the same cacao plant, the white version involves a different process for creation. Be this as it may, those who crave the creamy vanilla taste of the white version of chocolate will probably not care about the semantics involved.

Chocolate making involves first the extraction of useable items from the ancient cacao bean. While dark chocolates use the cocoa powder ground from the seeds, the versions of white use only the butter. Delicate by nature, white chocolates melt quite easily and scorch even easier. Take care when melting for things like ganache or chocolate fondue. Also, due to the use of real cocoa butter in the creation of top quality whites, this chocolate can store for months without spoilage.

Does eating chocolate really cause acne? This is the big question that almost everyone asks about acne and it has been much disputed for many years. There is hardly anyone who does not like chocolate, that is why we have always wanted to know if it actually can cause acne or not. Im sure that you heard at least one person, or more, say that chocolate can cause acne. Well there are a lot of people that do believe this myth and do indeed try and stay away from chocolate and you are probably not sure if its true or not, otherwise you would probably be eating a bar yourself whilst reading this article.

Well there are actually two answers to this, the shorter answer is “no” and the longer one is “not really, chocolate does not cause acne”. More confused are you? I guess that probably does not explain much so I will give you a little more detail on the causes of acne so you would be able to understand. The sebaceous gland under the skin produces an oil called sebum which travels up hair follicles taking off dead cells and then moisturizing the skin. Acne starts when the sebum oil gets trapped beneath the skin, this can be caused from various reasons such as an overproduction of the oil causing the follicle to block up, dead cells that have not been cleared up properly or the pore might be blocked from the top of the skin.

So chocolate cannot cause acne on its own but a bad diet can however cause acne. Too much fat, too much sugar and any other food that can affect your individual hormone production can affect your sebum oil production which can result in acne. So basically chocolate really does not cause acne but your entire diet can. Chocolate can either be a part of a healthy diet or an unhealthy diet it all depends on you and the quantities of fatty/oily foods.

You will probably always hear personal stories from all sorts of people where they claim that some of their acne problems are actually connected to chocolate in some way or another, where in fact this is probably not caused by the chocolate itself but from their entire diet in general or it could possibly be their genetics, or the acne can even be the result of an allergic reaction to chocolate which would really be bad because almost everyone loves chocolate.

Tempering Chocolate The Right Way

While tempering chocolate, it is essential that you follow the correct procedure for melting the chocolate; otherwise it may burn or separate. Many people think that tempering the chocolate is the same thing as melting it. However, even though tempering calls for melting the chocolate, the two procedures are not the same. Thus, before we get into the actual procedure for tempering chocolate, heres a look at what tempering means.

What Is Chocolate Tempering

Tempering is a method of liquefying chocolate through a process that entails melting of chocolate, cooling it, and then again melting it so as to stabilize the cocoa butter present in the chocolate and allow it to harden properly, thus bringing about the correct solidification of the chocolate when cooled.

What this essentially means is that unlike melting where the chocolate is simply brought to a liquid state through gradual heating; tempering involves cooling and then reheating the chocolate to precise temperatures, so that the chocolate hardens properly, achieves a glossy shine, and does not bloom (formation of cocoa butter layer on the cooled chocolate, resulting in a white powdery look).

Step-by-Step Guide to Tempering Chocolate

1. Cut the chocolate into 1/4th inch pieces and place in a double boiler. If you do not have a double boiler, you can improvise by using a saucepan to fill the water in and putting a metal bowl on top wherein the chocolate goes. Make sure that the water does not touch the bottom of the metal bowl.

2. Heat the water and melt the chocolate till it reaches a temperature of 113 to 118F. Stir the chocolate regularly so that the cocoa butter does not separate from the chocolate. Use a chocolate thermometer or a candy thermometer to avoid over heating or burning of the chocolate. It is important to use a thermometer to check the temperature as the chocolate can burn if overheated even by a few degrees.

3. Once the chocolate has melted, cool it till it reaches temperatures of about 82-84F for white and milk chocolate, and 85-86F for dark chocolate.

4. Put the chocolate back on the double boiler and heat once again till temperatures of 87-88F for white and milk chocolate and 88-90F for dark and bitter chocolate.

The tempering procedure is now complete. You can check if the chocolate has been tempered properly by applying a layer of chocolate on butter paper. After about 5 minutes, the chocolate should peel off easily from the paper. If it does, then the chocolate has been tempered properly, else not.

As is evident, tempering chocolate is not a difficult procedure. By following these steps precisely, you can rest assured that your chocolate will be tempered in the right way.
